Veggie Taco ‘Meat’ for Taco Tuesdays

This meal was inspired by my cousin Sarah Boyne Marxhausen. We spend an amazing week together every summer at camp in Maine. This summer, Sarah and her husband Jeff really wanted to provide a vegetarian meal and they made a super tasty veggie ‘meat’ taco and all the kids gobbled it up and asked for seconds.

I opt to have mine on a bed of lettuce but however you pour it, it’s definitely a hit for TACO TUESDAYS!

VEGETARIAN TACO ‘MEAT’
3 medium summer squash
2 cups mushrooms diced
1/2 yellow onion
3 small sweet peppers
1 zucchini
1 pepperoncini or jalapeno (we like the heat!)
1 tbsp olive oil or coconut oil
1 tbsp taco seasoning

Dice all the veggies super small (think single lego-sized). Heat a skillet and oil in pan. Add veggies, taco seasoning into pan. Toss well and often. Cook 10-15 minutes or until tender and color is bright.

Add taco toppings and enjoy!

[Side note: if you add onions in first, you won’t need to use oil or use at least you can use less]
